Keto Chocolate Chip Cookies
1 cup almond flour
1/4 cup + 2 tbsp coconut flour
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 cup + 2 tbsp unsalted butter, at room temperature
1/2 cup + 2 tbsps or Erythritol, or another Keto sweetener, or a mix.
1/2 tsp blackstrap molasses (optional to adds brown sugar flavor)
1 tsp vanilla extract
1/4 cup Stevie sweetened chocolate chips

Preheat oven at 350F.
In a bowl, beat together your butter, sweetener, vanilla and molasses until light and fluffy.
Add your eggs and beat again until combined.
Add the rest of the ingredients and mix well.
Scoop each cookie with a small ice cream scoop or a spoon onto a sheet pan.
Flatten each one slightly if needed.
Bake for 8-9 minutes or until the cookies are set and the bottoms lightly browned. Enjoy!
